Pesto Radiatore

_DSC2545Summer isn’t summer without dining al fresco, don’t you agree? And when dining al fresco, simplicity is the best way to go. We had dinner outside the other night. We were sitting on the balcony as the cooler air started to linger it’s way in, cold pesto pasta on a summer evening as the sun was just sitting there, floating in the sky, pink and orange… Mmm my heart jumps with joy thinking about this moment. Radiatore pasta, chunks of grilled chicken and sweet veggies all smothered in farmers market pesto. Simple and tasty too.

  1. Boil radiatore pasta, once fully cooked add in frozen peas. Let it sit and then drain.
  2. Grill chicken breasts until fully cooked.
  3. Cut up chicken breasts and in a large bowl, mix it with the pasta and peas.
  4. Chop up some black olives, red cherry tomatoes and zucchini (or whichever seasonal veggie you desire) and then, add it in the pasta mix.
  5. Spoon in a gracious amount of pesto into the mixture. Stir it up and serve. Keep it cold in the fridge. Enjoy! _DSC2537_DSC2540_DSC2518_DSC2529_DSC2528
