Red Velvet Cupcakes

red velvet cupcakesI love February not only because it’s my birthday month, but also because it’s the month of pink and red, hearts and roses, and chocolate and romance, all around. Leading up to Valentines Day, I want to share a few holiday posts, this being one of them, an easy and delicious red velvet cupcake recipe. I’m a huge fan of cream cheese frosting and rich cocoa, and this recipe includes both of those two tasty loves of mine.

*makes 24 cupcakes

Cupcakes

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350 degrees F. Line muffin pans with cupcake papers.
  2. Mix together flour, sugar, baking soda, salt, cocoa powder.
  3. In a separate bowl mix together oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer.
  4. Combine dry ingredients to the wet and mix thoroughly.
  5. Fill the cupcake papers 2/3 of the way and bake for about 20 minutes.
  6. Test the cupcakes with a toothpick, take them out of the oven, and let them cool.

Cream Cheese Frosting

  • 1 pound cream cheese, softened
  • 2 sticks butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups sifted confectioners sugar
  1. Beat the cream cheese, butter, and vanilla together until smooth.
  2. Add the sugar and continue to mix until frosting is light and fluffy.
  3. Use a piping bag to add frosting to the cupcakes.
