Sausage, Kale, and White Bean Soup

_DSC1302I cooked up this rustic, veggie-filled soup last week when it was chilly and rainy outside. And let me tell you, it hit the spot. It seriously was the perfect cure to the weather outside. With sweatpants on and a candle burning, music in the background and crunchy toast to dip, I’m definitely making this soup again. It includes hearty vegetables and spicy sausage, white beans and sweet onions.

  • 2 teaspoons extra-virgin olive oil
  • 2 celery stalks, chopped
  • 1 yellow onion, diced
  • 6 cups low-sodium organic chicken broth
  • White cannellini beans
  • 3 large handfuls of kale
  • Coarse salt
  • Ground pepper
  • 8 ounces of spicy sausage
  • 3/4 cup water
  1. In a large pot, heat olive oil over medium. Add chopped sausage and cook until golden brown.
  2. Add celery and onions and cook until soft.
  3. Add broth, water, and beans and bring to a boil.
  4. Reduce the heat to low and toss in the kale, continue to cook the soup.
  5. Sprinkle in some salt and pepper. Serve warm with lightly buttered toast. Enjoy.

    I have a very similar recipe and just bought all the ingredients to make it last nice. Mine includes carrots too.
