Traditional Chicken Soup

_DSC1706 2At the beginning of the week, I’ll try to cook up a big hearty pot soup and eventually, over the course of the week, it’ll be gone. This recipe is perfect to savor throughout the week, especially if it’s a cold one. It’s a traditional healthy chicken soup and includes all sorts of delicious veggies and tender chicken meat.

  • 12 red baby potatoes
  • 3 carrots (I didn’t have any at the time so I used a handful baby carrots)
  • 1 onion
  • 3 stalks celery
  • 2 cloves of garlic
  • 1 package of mushrooms
  • 2 tomatoes
  • Parsley
  • Rosemary leaves
  • 6 chicken thighs
  • Salt
  • Pepper
  • 1 3/4 cup of organic chicken stock
  • 1/4 cup of water
  1. Chop up the onions, celery, carrots, garlic, and potatoes and boil them on high in a large pot filled with water and chicken stock.
  2. In a separate smaller pot, boil the chicken thighs.
  3. Once the chicken thighs are cooked, add them into the veggie pot. Turn down the heat to medium to low and add in the tomatoes, mushrooms and rosemary leaves.
  4. Set to simmer and toss in the parsley. Sprinkle in salt and pepper as desired. Mix well and once everything is fully cooked, enjoy.

      I love making veggie soups too Rosie! In fact, we made a yellow squash and zucchini squash soup last night. It was so yummy, I think you’d like it!

    Yuuum! Love a good soup like this one! I also like to make a big batch of it too, it holds well in the fridge and it’s so comforting when it’s chilly outside. :)
