Very Berry Muffins

Blue-Berry-MuffinsThere are certain things I miss about being home in Connecticut. One of them is the little bakery in our town called, Connecticut Muffin. On Saturday mornings it’s tradition that my parents wake up early and go into town for a window seat, a coffee, and a very berry muffin. And sometimes if I’m up at the right time, I’ll go with them. They are the best muffins, especially when toasted and slathered in butter. I’ve been a little homesick lately and in my attempt to recreate Saturday mornings at home, I decided I’d try to make my own very berry muffins. They turned out to be delicious. Instead of using a cupcake pan, I even bought an extra large muffin tin in order to make them as close to the real deal as possible.

P.S. how do you deal with homesickness? Do you turn to comfort food, like me? ; )

  • 1 cup sugar
  • 2 cups flour
  • 1/2 cup softened butter
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 tablespoons greek yogurt
  • 2 cups mixed berries (I used the frozen kind, they tasted just as good!)
  1. In a small bowl, combine the flour, baking powder and salt.
  2. In a large bowl, cream together the butter and sugar. Add in the eggs and vanilla extract.
  3. Pour the small bowl mixture into the large bowl mixture and stir. Add in the milk, yogurt, and berries.
  4. Grease muffin tin with olive oil or butter and spoon batter into each cup filling it about 2/3 of the way.
  5. Bake at 375 degrees F for 25–30 minutes or until golden brown. Enjoy.
